Ingredients

  • ½ cup 0% fat plain greek yogurt
  • 1-2 tsp lemon juice
  • ¼ teaspoon garlic powder
  • sea salt and pepper, to taste
  • 2 cups shredded cooked chicken
  • 4 slices cooked bacon, chopped
  • ½ cup quartered cherry or grape tomatoes
  • ½ cup diced cucumber
  • 1 tablespoon finely chopped chives
  • lettuce and/or bread, for serving


Instructions

  1. In a large bowl, whisk together the Greek yogurt, lemon juice, and garlic powder. Season with salt and pepper to taste.
  2. Add the shredded chicken, bacon, tomatoes, cucumber, and chives. Gently stir until everything is evenly coated. Taste and adjust seasoning as needed.
  3. Serve over fresh lettuce for lettuce wraps, or spoon onto your favorite bread for a sandwich.

Notes

Use leftover chicken for a faster prep time.
Adjust the seasoning based on your taste preference.
