- ½ cup 0% fat plain greek yogurt
- 1-2 tsp lemon juice
- ¼ teaspoon garlic powder
- sea salt and pepper, to taste
- 2 cups shredded cooked chicken
- 4 slices cooked bacon, chopped
- ½ cup quartered cherry or grape tomatoes
- ½ cup diced cucumber
- 1 tablespoon finely chopped chives
- lettuce and/or bread, for serving
Instructions
- In a large bowl, whisk together the Greek yogurt, lemon juice, and garlic powder. Season with salt and pepper to taste.
- Add the shredded chicken, bacon, tomatoes, cucumber, and chives. Gently stir until everything is evenly coated. Taste and adjust seasoning as needed.
- Serve over fresh lettuce for lettuce wraps, or spoon onto your favorite bread for a sandwich.
Notes
Use leftover chicken for a faster prep time.
