  • 1 teaspoon vanilla bean paste or 2 teaspoons vanilla bean extract
  • 1 cup + 3 tablespoons all-purpose flour
  • ¼ teaspoon baking powder
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 tablespoon plant-based milk
  • ½ cup powdered sugar (sifted)


Instructions

  1. In a bowl, cream together the vegan butter, ½ cup sugar, and ground earl grey tea for about a minute until light and fluffy.
  2. Add the flax egg and vanilla bean paste, mixing for another 10 seconds.
  3. Add the sifted flour, baking powder, baking soda, and salt, mixing just until a thick cookie batter forms without streaks of flour.
  4. Cover the bowl with plastic wrap and refrigerate for 30 minutes to 1 hour.
  5. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  6. Remove the dough from the fridge, dividing it into 8 portions, weighing 50 grams each. Roll them into balls and coat in the reserved sugar.
  7. Place the dough balls on the baking sheet, 2 inches apart, and lightly press down with your palm.
  8. Bake for 12-14 minutes until the bottoms are golden and the centers are soft but not raw.
  9. After removing from the oven, tap the tray on the counter to create a wrinkled effect, and let them cool for 5 minutes.
  10. While cooling, prepare the vanilla glaze by whisking together the sifted powdered sugar, plant-based milk, and vanilla until smooth.
  11. Drizzle the glaze over cool cookies and let sit for about 5 minutes to harden before serving.
