- ½ cup + 2 tablespoons sugar (½ cup for dough, 2 tablespoons for rolling before baking)
- 2 teaspoons earl grey tea leaves, ground
- 1 flax egg (1 tablespoon ground flaxseed mixed with 3 tablespoons water, left to sit for 5 minutes)
- 1 teaspoon vanilla bean paste or 2 teaspoons vanilla bean extract
- 1 cup + 3 tablespoons all-purpose flour
- ¼ teaspoon baking powder
- ¼ teaspoon baking soda
- ¼ teaspoon salt
- 1 tablespoon plant-based milk
- ½ cup powdered sugar (sifted)
Instructions
- In a bowl, cream together the vegan butter, ½ cup sugar, and ground earl grey tea for about a minute until light and fluffy.
- Add the flax egg and vanilla bean paste, mixing for another 10 seconds.
- Add the sifted flour, baking powder, baking soda, and salt, mixing just until a thick cookie batter forms without streaks of flour.
- Cover the bowl with plastic wrap and refrigerate for 30 minutes to 1 hour.
- Preheat the oven to 350°F and line a baking sheet with parchment paper.
- Remove the dough from the fridge, dividing it into 8 portions, weighing 50 grams each. Roll them into balls and coat in the reserved sugar.
- Place the dough balls on the baking sheet, 2 inches apart, and lightly press down with your palm.
- Bake for 12-14 minutes until the bottoms are golden and the centers are soft but not raw.
- After removing from the oven, tap the tray on the counter to create a wrinkled effect, and let them cool for 5 minutes.
- While cooling, prepare the vanilla glaze by whisking together the sifted powdered sugar, plant-based milk, and vanilla until smooth.
- Drizzle the glaze over cool cookies and let sit for about 5 minutes to harden before serving.

Make sure to sift the powdered sugar for a smoother glaze.
