- 1 pound 80/20 ground beef or chuck (can substitute with ground turkey, chicken, or bison)
- 4 – 6 6-inch flour tortillas
- 4 – 6 slices thin cheddar cheese (or organic American, Pepper Jack, Havarti, Muenster, Provolone)
- ½ teaspoon kosher salt
- ½ teaspoon garlic powder
- ½ teaspoon black pepper
- Dill pickle chips, chopped white onions, shredded lettuce, chopped grape tomatoes
- ½ cup mayonnaise (avocado mayo recommended)
- 1 tablespoon Dijon mustard
- 1 teaspoon lemon juice (fresh is best)
- ½ teaspoon seasoning salt (such as Lawry’s)
Instructions
- In a small bowl, combine all the special sauce ingredients until smooth, then refrigerate until ready to use. This can be prepared 3–4 days in advance.
- In another small bowl, mix kosher salt, garlic powder, and black pepper. Sprinkle the mixture evenly over both sides of the ground beef without fully blending it in.
- Shape the seasoned ground beef into 4 – 6 meatballs and place on a baking sheet. Chill in the freezer for up to 15 minutes while heating your cooking surface.
- Preheat a flattop griddle, stovetop griddle, or cast iron skillet to 400°F (205°C). Prepare your toppings while it heats.
- Place each meatball on the griddle, top with a flour tortilla, and use a burger press to smash down quickly until thin. No oil is needed; the beef will release fat during cooking. For leaner meats, use a bit of high heat oil if necessary.
- Cook for 60–90 seconds, press again, then continue cooking for another 2 minutes until a crispy crust forms.
- Check for a deep, crispy sear by sliding a spatula underneath. If it’s not crisp, increase the heat of your pan.
- Flip the tacos, add slices of cheese, and cook until the tortillas are crisp and the cheese melts (about 1 minute), covering briefly if needed.
- Top with shredded lettuce, dill pickle chips, chopped onions, chopped tomatoes, and a drizzle of special sauce. Serve immediately and savor the delightful flavors!
Notes
The special sauce can be adjusted to taste; add more mustard or lemon for extra zest.
For added flavor, consider marinating the meatballs for a short time before cooking.
