Ingredients

Scale
  • 8 to 10 leaves fresh mint washed
  • ½ cup fresh pineapple diced into small chunks (about 1-inch pieces)
  • 1 ounce fresh lime juice or 1 lime cut into 4 wedges
  • 1 ounce simple syrup
  • 1½ ounces light rum
  • ½ cup club soda
  • 1 wedge pineapple for garnish
  • 1 sprig fresh mint for garnish
  • ice for serving

Instructions

  1. Remove the mint leaves from the stems and clap them between your hands to release the oils.
  2. In a cocktail shaker, combine the mint leaves, pineapple, lime juice or lime wedges, and simple syrup. Muddle until the pineapple releases its juice.
  3. Add ice and rum to the shaker. Shake vigorously for about 15 seconds.
  4. Strain the mixture into a highball glass filled with ice.
  5. Top with club soda and garnish with a sprig of mint and a small piece of pineapple.

Notes

Adjust the sweetness by modifying the amount of simple syrup used.
For a fun twist, experiment with different fruits like strawberries or mango.
Serve immediately for the best flavor and freshness.
