- 12 ounce fettuccine pasta dry
- 2 tablespoons olive oil
- 3/4 cup unsalted butter
- 2 chicken breasts boneless and skinless
- 1 1/2 teaspoons salt divided
- 1 1/2 teaspoons fresh ground pepper divided
- 4 cloves garlic very finely chopped
- 2 tablespoons all-purpose flour
- 2 1/3 cups heavy cream
- 1 cup grated parmesan cheese add extra for topping if desired
- 1 tablespoon chopped fresh parsley for garnish
Instructions
- Bring a large pot of water to a boil, add salt, and cook the fettuccine according to package instructions until al dente.
- Drain the pasta and set it aside in a colander, optionally drizzling with olive oil to prevent sticking.
- In a skillet over high heat, pour in the olive oil and 1/4 cup of butter. Season the chicken with salt and pepper, then add it to the skillet, cooking until golden brown.
- Cover the skillet and reduce the heat to medium. Continue cooking the chicken until it is no longer pink, about 5 more minutes. Transfer the chicken to a plate and cover it with foil.
- Prepare the sauce while the chicken rests. Melt the remaining 1/2 cup of butter in a separate skillet over medium heat, then add the garlic, cooking for about 30 seconds.
- Lower the heat and add a bit of salt and pepper. Stir in the flour quickly until it forms a paste.
- Very slowly add the heavy cream while constantly stirring until the sauce becomes smooth.
- Cook the sauce until it is steaming and thickened. Stir in 1/2 cup of parmesan cheese until melted; adjust seasoning if necessary. Remove from heat.
- To serve, slice the chicken into strips, place the fettuccine in serving bowls, and top with chicken and generous amounts of the Alfredo sauce.
- Garnish with chopped parsley and remaining parmesan cheese. Serve immediately and savor!
Notes
For extra creaminess, add a splash of additional heavy cream to the sauce.
Feel free to substitute chicken with shrimp or vegetables for a different twist.
