  • 12 ounce fettuccine pasta dry
  • 2 tablespoons olive oil
  • 3/4 cup unsalted butter
  • 2 chicken breasts boneless and skinless
  • 1 1/2 teaspoons salt divided
  • 1 1/2 teaspoons fresh ground pepper divided
  • 4 cloves garlic very finely chopped
  • 2 tablespoons all-purpose flour
  • 2 1/3 cups heavy cream
  • 1 cup grated parmesan cheese add extra for topping if desired
  • 1 tablespoon chopped fresh parsley for garnish


Instructions

  1. Bring a large pot of water to a boil, add salt, and cook the fettuccine according to package instructions until al dente.
  2. Drain the pasta and set it aside in a colander, optionally drizzling with olive oil to prevent sticking.
  3. In a skillet over high heat, pour in the olive oil and 1/4 cup of butter. Season the chicken with salt and pepper, then add it to the skillet, cooking until golden brown.
  4. Cover the skillet and reduce the heat to medium. Continue cooking the chicken until it is no longer pink, about 5 more minutes. Transfer the chicken to a plate and cover it with foil.
  5. Prepare the sauce while the chicken rests. Melt the remaining 1/2 cup of butter in a separate skillet over medium heat, then add the garlic, cooking for about 30 seconds.
  6. Lower the heat and add a bit of salt and pepper. Stir in the flour quickly until it forms a paste.
  7. Very slowly add the heavy cream while constantly stirring until the sauce becomes smooth.
  8. Cook the sauce until it is steaming and thickened. Stir in 1/2 cup of parmesan cheese until melted; adjust seasoning if necessary. Remove from heat.
  9. To serve, slice the chicken into strips, place the fettuccine in serving bowls, and top with chicken and generous amounts of the Alfredo sauce.
  10. Garnish with chopped parsley and remaining parmesan cheese. Serve immediately and savor!

Notes

For extra creaminess, add a splash of additional heavy cream to the sauce.
Feel free to substitute chicken with shrimp or vegetables for a different twist.
