- 2 1/2 cups All Purpose Flour, sifted
- 3 1/2 tbsp Poppy Seeds
- 1 1/2 tsp Baking Powder
- 1/2 tsp Kosher Salt
- 1 2/3 cups Sugar
- 4 tbsp Lemon Zest
- 1/3 cup Brown Sugar
- 3/4 cup Salted Butter, room temperature
- 1/4 cup Olive Oil
- 4 large Eggs, room temperature
- 1 tbsp Lemon Emulsion
- 2 tsp Vanilla Extract
- 1/4 tsp Almond Extract
- 3/4 cup Sour Cream, room temperature
- 1/4 cup Lemon Juice
- 1/4 cup Whole Milk
- 1/4 cup Water
- 1/4 cup Sugar
- 2 tbsp Lemon Juice
- 4 oz Cream Cheese, room temperature
- 2 tbsp Salted Butter, melted
- 2 cups Powdered Sugar
- 2 tbsp Lemon Juice
- 2-3 tbsp Whole Milk, room temperature
- 1 tsp Poppy Seeds
Instructions
- Preheat the oven to 325°F and prepare a bundt pan with nonstick baking spray.
- In a large bowl, combine the flour, poppy seeds, baking powder, and salt. Whisk together.
- In a stand mixer, combine sugar and lemon zest. Rub together for a few minutes until fragrant and pale yellow. Add butter, brown sugar, and oil. Mix on medium speed until light and fluffy.
- Reduce speed and add eggs one at a time, mixing well after each addition. Scrape the sides of the bowl and incorporate lemon emulsion, vanilla, and almond extract.
- Gradually mix in half of the dry ingredients. Add sour cream, lemon juice, and milk, mixing until just combined. Finish with the remaining dry ingredients until smooth.
- Bake for 70-80 minutes, or until a toothpick inserted comes out clean.
- Prepare the lemon simple syrup by heating water and sugar in a saucepan until dissolved. Stir in lemon juice and let cool.
- Allow the cake to cool in the pan for 10 minutes before transferring to a wire rack. Brush with the lemon syrup.
- Make the glaze by beating cream cheese until smooth, then adding powdered sugar, melted butter, lemon juice, poppy seeds, and milk. Mix until smooth.
- Pour the glaze over the cooled cake just before serving.
Notes
Ensure all ingredients are at room temperature for best results.
You can substitute vegetable oil if desired.
