Instructions
- Preheat your oven to 425°F (220°C) with a cast-iron skillet inside.
- In a mixing bowl, beat the eggs with an electric mixer until frothy for about 1 minute.
- Add in the milk, flour, sugar, vanilla extract, and salt. Mix until the batter is smooth.
- Once the oven is ready, remove the skillet and add the butter to melt, coating the pan.
- Pour the batter into the hot skillet immediately.
- Bake for 15 to 20 minutes until the pancake puffs up and turns golden brown.
- Carefully remove the skillet from the oven, dust with powdered sugar, and serve with fresh berries, fruit, or maple syrup.
