- 2 pizza dough balls (or 1 lb store-bought pizza dough)
- 3/4 cup ricotta cheese
- 1½ cups shredded mozzarella cheese
- 1 cup sliced pepperoni
- ½ teaspoon salt
- 1 teaspoon garlic powder (divided)
- ¼ teaspoon black pepper
- 1 large egg (whisked with a tablespoon of water)
- 1 teaspoon Italian seasoning

Instructions
- Preheat the oven to 500°F and place a pizza stone or baking sheet inside to heat.
- Divide the dough into 4 portions and let them rest at room temperature for 20 to 30 minutes if refrigerated.
- On a piece of parchment paper, press and stretch each dough portion into a circle about 6 to 7 inches wide.
- In a small bowl, mix ricotta with salt, pepper, and 1/2 teaspoon of garlic powder.
- Spread a scoop of ricotta on one half of each dough circle, then top with pepperoni and mozzarella.
- Fold the dough over the filling, press the edges to seal, and crimp with a fork. Make a small cut on top for steam to escape.
- Brush the tops with the egg wash, then sprinkle with Italian seasoning and remaining garlic powder.
- Transfer the parchment with calzones onto the preheated pan or stone.
- Bake for 12 to 15 minutes until golden brown and crisp.
- Allow to cool slightly before serving warm with ranch and pizza sauce.
Notes
Ensure the pizza stone is preheated for a crispier crust.
