Ingredients

  • 2 pizza dough balls (or 1 lb store-bought pizza dough)
  • 3/4 cup ricotta cheese
  • 1½ cups shredded mozzarella cheese
  • 1 cup sliced pepperoni
  • ½ teaspoon salt
  • 1 teaspoon garlic powder (divided)
  • ¼ teaspoon black pepper
  • 1 large egg (whisked with a tablespoon of water)
  • 1 teaspoon Italian seasoning
  • ranch dressing
  • pizza sauce


Instructions

  1. Preheat the oven to 500°F and place a pizza stone or baking sheet inside to heat.
  2. Divide the dough into 4 portions and let them rest at room temperature for 20 to 30 minutes if refrigerated.
  3. On a piece of parchment paper, press and stretch each dough portion into a circle about 6 to 7 inches wide.
  4. In a small bowl, mix ricotta with salt, pepper, and 1/2 teaspoon of garlic powder.
  5. Spread a scoop of ricotta on one half of each dough circle, then top with pepperoni and mozzarella.
  6. Fold the dough over the filling, press the edges to seal, and crimp with a fork. Make a small cut on top for steam to escape.
  7. Brush the tops with the egg wash, then sprinkle with Italian seasoning and remaining garlic powder.
  8. Transfer the parchment with calzones onto the preheated pan or stone.
  9. Bake for 12 to 15 minutes until golden brown and crisp.
  10. Allow to cool slightly before serving warm with ranch and pizza sauce.

Notes

Ensure the pizza stone is preheated for a crispier crust.
