- ½ cup (113 g) unsalted butter, softened
- 1 cup (200 g) granulated sugar
- ½ teaspoon salt
- 6 ounces (170 g) fresh blackberries
- 1 tablespoon lemon zest
- 1 tablespoon fresh lemon juice
- ½ teaspoon vanilla extract
- 1 cup (130 g) all-purpose flour
- 1 tablespoon cornstarch
- ½ teaspoon baking powder
- 1 cup (120 g) confectioners' sugar
- 2 teaspoons lemon juice
- 2 tablespoons heavy cream
Instructions
- Preheat the oven to 350°F. Prepare an 8-inch square pan by lining it with parchment paper or aluminum foil, leaving a 1-inch overhang. Lightly spray the lining with nonstick spray.
- In a large bowl, use an electric mixer to beat the butter, sugar, and salt together until light and fluffy, about 3 minutes.
- Add the blackberries and their juices, lemon zest, lemon juice, and vanilla extract. Beat until the blackberries are broken down and well incorporated, approximately 3 minutes. The mixture may appear slightly curdled.
- On low speed, mix in the flour, cornstarch, and baking powder until combined.
- Pour the batter into the prepared pan, spreading it evenly.
- Bake for 30 to 35 minutes until the bars are puffed and nearly set. Transfer the pan to a wire rack and let the bars cool completely.
Notes
For a stronger lemon flavor, increase the lemon zest by an extra teaspoon.
These bars can be stored in an airtight container in the fridge for up to a week.
Dust with additional confectioners’ sugar before serving for a decorative touch.
