  • ½ cup (113 g) unsalted butter, softened
  • 1 cup (200 g) granulated sugar
  • ½ teaspoon salt
  • 6 ounces (170 g) fresh blackberries
  • 1 tablespoon lemon zest
  • 1 tablespoon fresh lemon juice
  • ½ teaspoon vanilla extract
  • 1 cup (130 g) all-purpose flour
  • 1 tablespoon cornstarch
  • ½ teaspoon baking powder
  • 1 cup (120 g) confectioners' sugar
  • 2 teaspoons lemon juice
  • 2 tablespoons heavy cream


Instructions

  1. Preheat the oven to 350°F. Prepare an 8-inch square pan by lining it with parchment paper or aluminum foil, leaving a 1-inch overhang. Lightly spray the lining with nonstick spray.
  2. In a large bowl, use an electric mixer to beat the butter, sugar, and salt together until light and fluffy, about 3 minutes.
  3. Add the blackberries and their juices, lemon zest, lemon juice, and vanilla extract. Beat until the blackberries are broken down and well incorporated, approximately 3 minutes. The mixture may appear slightly curdled.
  4. On low speed, mix in the flour, cornstarch, and baking powder until combined.
  5. Pour the batter into the prepared pan, spreading it evenly.
  6. Bake for 30 to 35 minutes until the bars are puffed and nearly set. Transfer the pan to a wire rack and let the bars cool completely.

Notes

For a stronger lemon flavor, increase the lemon zest by an extra teaspoon.
These bars can be stored in an airtight container in the fridge for up to a week.
Dust with additional confectioners’ sugar before serving for a decorative touch.
