- 2 lb 80/20 Ground Beef
- 1 medium Yellow Onion, (grated)
- 1 Orange Bell Pepper, (diced)
- 1/2 cup BBQ Sauce
- 1/4 cup Ketchup
- 1 tbsp Worcestershire Sauce
- 1 tbsp Yellow Mustard
- 2 large Eggs
- 1 cup Panko
- 1 packet Lipton Onion Soup Mix
- 1 tbsp Italian Seasoning
- 1/2 tbsp Garlic Powder
- 1 tsp Smoked Paprika
- 1 1/2 tsp Kosher Salt
- 1 tsp Black Pepper
- 2 tsp Dried Parsley
- 1/2 cup BBQ Sauce
- 1/4 cup Ketchup
- 1 tbsp Balsamic Vinegar, (or apple cider vinegar)
- 1/4 cup Brown Sugar
- 3 tbsp Water
- 2 tbsp Butter
Instructions
- Preheat the oven to 350°F and line a 9×13 baking dish with parchment paper or aluminum foil.
- Grate the onion into a large bowl and add the diced bell pepper, BBQ sauce, ketchup, Worcestershire sauce, yellow mustard, eggs, panko, Lipton onion soup mix, and all seasonings. Mix well.
- Incorporate the ground beef into the bowl and combine thoroughly using your hands or a wooden spoon.
- Transfer the meatloaf mixture into the baking dish, shaping it into a 9×4 inch loaf. Cover with aluminum foil and bake for 40 minutes.
- While the meatloaf is baking, prepare the BBQ glaze by combining BBQ sauce, ketchup, balsamic vinegar, brown sugar, and water in a small saucepan over medium-low heat. Stir until the sugar dissolves, about 5 minutes, then add the butter and stir until melted.
- After 40 minutes, remove the foil and brush half of the BBQ glaze over the meatloaf. Increase the oven temperature to 400°F and bake for an additional 15-20 minutes, or until the glaze caramelizes and the internal temperature reaches 165°F.
- Once done, brush the meatloaf with remaining glaze and let it cool for 10-15 minutes before slicing.
Notes
Feel free to substitute ground turkey for a leaner option.
The glaze can be adjusted according to your spice preference.
Allowing the meatloaf to rest helps maintain its moisture.
