  • 2 lb 80/20 Ground Beef
  • 1 medium Yellow Onion, (grated)
  • 1 Orange Bell Pepper, (diced)
  • 1/2 cup BBQ Sauce
  • 1/4 cup Ketchup
  • 1 tbsp Worcestershire Sauce
  • 1 tbsp Yellow Mustard
  • 2 large Eggs
  • 1 cup Panko
  • 1 packet Lipton Onion Soup Mix
  • 1 tbsp Italian Seasoning
  • 1/2 tbsp Garlic Powder
  • 1 tsp Smoked Paprika
  • 1 1/2 tsp Kosher Salt
  • 1 tsp Black Pepper
  • 2 tsp Dried Parsley
  • 1/2 cup BBQ Sauce
  • 1/4 cup Ketchup
  • 1 tbsp Balsamic Vinegar, (or apple cider vinegar)
  • 1/4 cup Brown Sugar
  • 3 tbsp Water
  • 2 tbsp Butter


Instructions

  1. Preheat the oven to 350°F and line a 9×13 baking dish with parchment paper or aluminum foil.
  2. Grate the onion into a large bowl and add the diced bell pepper, BBQ sauce, ketchup, Worcestershire sauce, yellow mustard, eggs, panko, Lipton onion soup mix, and all seasonings. Mix well.
  3. Incorporate the ground beef into the bowl and combine thoroughly using your hands or a wooden spoon.
  4. Transfer the meatloaf mixture into the baking dish, shaping it into a 9×4 inch loaf. Cover with aluminum foil and bake for 40 minutes.
  5. While the meatloaf is baking, prepare the BBQ glaze by combining BBQ sauce, ketchup, balsamic vinegar, brown sugar, and water in a small saucepan over medium-low heat. Stir until the sugar dissolves, about 5 minutes, then add the butter and stir until melted.
  6. After 40 minutes, remove the foil and brush half of the BBQ glaze over the meatloaf. Increase the oven temperature to 400°F and bake for an additional 15-20 minutes, or until the glaze caramelizes and the internal temperature reaches 165°F.
  7. Once done, brush the meatloaf with remaining glaze and let it cool for 10-15 minutes before slicing.

Notes

Feel free to substitute ground turkey for a leaner option.
The glaze can be adjusted according to your spice preference.
Allowing the meatloaf to rest helps maintain its moisture.
