  • 10 oz challah bread, sliced 1 inch thick
  • 7 large eggs
  • 1 ½ cups fat-free milk
  • 1 ½ teaspoons vanilla extract
  • ½ teaspoon cinnamon
  • ¼ cup sugar
  • ¼ teaspoon salt
  • 1 teaspoon Meyers rum or rum extract, optional
  • 1 tbsp whipped butter
  • ½ cup brown sugar, packed
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1 tbsp Meyers rum or 1 tsp rum extract, optional
  • 4 medium ripe bananas, sliced


Instructions

  1. Spray a 13 x 9-inch baking dish with cooking spray.
  2. Arrange bread slices in a single layer in the baking dish, gently squeezing them to fit.
  3. In a large bowl, whisk together eggs, milk, vanilla extract, ½ teaspoon cinnamon, sugar or monk fruit sweetener, salt, and rum extract (if using). Pour the mixture evenly over the bread. Cover and refrigerate for at least 8 hours or overnight.
  4. Preheat the oven to 350°F. Remove the baking dish from the refrigerator to bring the bread to room temperature.
  5. Bake uncovered in the middle of the oven for 40 to 45 minutes until puffed and edges are pale golden.
  6. While the bread bakes, melt the whipped butter in a large deep skillet over low heat.
  7. Add the brown sugar, cinnamon, vanilla extract, and rum extract (if using) to the skillet. Stir until the sugar dissolves and let the sauce simmer for about 2 minutes until thickened. Add a few drops of water if necessary.
  8. Add sliced bananas to the sauce and simmer for 1 minute. Remove from heat and keep covered until the French toast is ready.
  9. Once the French toast is cooked, divide it among 8 plates and top with the banana mixture. Serve and enjoy!

Notes

For best results, allow the bread to soak in the egg mixture overnight.
Feel free to substitute the sugar with your preferred sweetener for a healthier option.
This dish can be served with maple syrup or whipped cream for extra flavor.
