Instructions
- Preheat the oven to 425°F (218°C) and line two large baking sheets with parchment paper or silicone baking mats.
- Wash and peel the sweet potatoes, then cut them into thin sticks about 1/4-inch wide, drying them thoroughly with paper towels.
- In a large bowl or zip-top bag, toss the sweet potatoes with cornstarch until evenly coated, then strain off any excess cornstarch.
- Return the sweet potatoes to the bowl, toss with oil, salt, and any optional seasonings.
- Spread the fries in a single layer on the prepared baking sheets, ensuring they are not crowded.
- Bake for 15 minutes, flip the fries, and bake for an additional 10-15 minutes until crispy.
- Serve immediately with your favorite dipping sauce, or leave them in the oven to cool for extra crispiness.
