  • 12 Tablespoons cornstarch
  • 2 Tablespoons oil, such as avocado, sunflower, coconut, grapeseed, or olive oil
  • 1/2 teaspoon salt
  • optional seasoning: cayenne, chili powder, garlic powder, or paprika


Instructions

  1. Preheat the oven to 425°F (218°C) and line two large baking sheets with parchment paper or silicone baking mats.
  2. Wash and peel the sweet potatoes, then cut them into thin sticks about 1/4-inch wide, drying them thoroughly with paper towels.
  3. In a large bowl or zip-top bag, toss the sweet potatoes with cornstarch until evenly coated, then strain off any excess cornstarch.
  4. Return the sweet potatoes to the bowl, toss with oil, salt, and any optional seasonings.
  5. Spread the fries in a single layer on the prepared baking sheets, ensuring they are not crowded.
  6. Bake for 15 minutes, flip the fries, and bake for an additional 10-15 minutes until crispy.
  7. Serve immediately with your favorite dipping sauce, or leave them in the oven to cool for extra crispiness.
