- ⅔ cup white sugar
- ⅔ cup brown sugar
- 2 eggs
- 1 egg yolk
- ½ cup unsalted butter melted, then cooled slightly
- 1 teaspoon vanilla extract
- 1 ½ cups almond flour sifted if lumpy
- ⅔ cup cocoa powder sifted if lumpy
- ½ teaspoon baking powder
- ¼ teaspoon salt
- ½ cup chocolate chips
- ¾ cup grated zucchini
Instructions
- Preheat the oven to 350 degrees Fahrenheit and line an 8×8 baking pan with parchment paper.
- In a medium bowl, cream together the white and brown sugars, eggs, and egg yolk for about 2 minutes.
- Mix in the melted butter and vanilla extract until well combined.
- Add the almond flour, cocoa powder, baking powder, and salt, mixing until smooth.
- Fold in the grated zucchini and chocolate chips until evenly distributed.
- Pour the batter into the prepared pan and spread evenly. Optionally, sprinkle extra chocolate chips on top.
- Bake for 38-42 minutes, or until a toothpick comes out mostly clean. Allow cooling completely before slicing to prevent crumbling.
- For an extra treat, drizzle with melted chocolate chips and top with flaky salt before serving.
Notes
Make sure to let the brownies cool completely to avoid crumbling while slicing.
